RICETTA: MUFFIN AL DOPPIO CIOCCOLATO (Double chocolate muffins)

A little late on the schedule, here we are with this week's muffins, yaay! Today the chef (ehehe guess who's le chef?) suggets double chocolate muffins. A real treat, although maybe not the best choice in this excessively hot weather. As a matter of fact, these muffins are being eaten very slowly, only in the morning when the temperature is not too hot. Anyways, I was kind of compelled by the circumstances: no breakfast materials and some chocolate leftovers starting to melt thanks to the rising temperature.
In these days I really feel for the poor meltin' witch of Oz.

Ingredienti per 12 muffin:
 • 250 gr farina 00.
 • 150 gr zucchero scuro o bianco.
 • 2 uova.
 • un cucchiaio di lievito.
 • mezza bustina di vanillina (facoltativa).
 • 50 gr burro fuso.
 • 250 gr di yogurt bianco (oppure, consigliati, vaniglia o stracciatella).
 • 100 gr cioccolato fondente spezzettato grossolanamente.
 • 100 gr cioccolato bianco spezzettato grossolanamente.

Ingredients for 12 muffins:
 • 250 gr whole wheat flour.
 • 150 gr brown sugar (or white, you decide).
 • 250 gr plain yogurt (other suggestions: vanilla or chocolate chip yogurt).
 • 2 eggs.
 • 1 Tsp baking powder.
 • 1/4 tsp of vanillin (optional).
 • 50 gr melted butter.
 • 100 gr dark chocolate, chopped.
 • 100 gr white chocolate, chopped.
You can vary the type of chocolate to suit your taste from sweet milk chocolate to dark bittersweet. You can also use flavoured chocolate and choose yogurt flavours accordingly.

Preheat the oven to 350°F (180°C).

Step 1) In un'ampia ciotola setacciamo insieme farina, lievito e vanillina.

Step 1) In a large bowl sift together flour, baking powder and vanillin.

Step 2) In una ciotola separata mescoliamo uova, yogurt, burro sciolto e zucchero.

Step 2) In a different bowl cream together sugar, eggs, melted butter and yogurt.

Step 3) Mix dry and wet ingredients then add the chopped chocolate.

Step 4) Spoon the mix into a greased muffin tin. Bake at 350°F (180°C) for 15 minutes.

Our double chocolate muffins are ready. If you want, you can sprinkle them with icing sugar or make a chocolate icing for an even healthier and lighter treat (eheheh). These muffins are really good and super moist but probably a tiny bit too heavy for the summer.
If you're asking yourself: "Why did she say she had nothing for breakfast and then she put a ton of yogurt in her muffins?" truth is, my boyfriend, who snubbed my muffins when I first started to cook them, now snubs the yogurt.

Alla prossima,

Until next time,

Alice

RICETTA: DELIZIOSI MUFFIN ALLE PESCHE (Delicious peach muffins)

The one good thing of having a little known blog is that nobody will care if you don't write for a bunch of days, desperately trying to finish your thesis. So I didn't have much time for blogging but somehow I found enough to cook. (It's time for "procrastination the musical"!).
These peach muffins are absolutely divine. They were a surprise for me as well since it was the first time I had ever tried cooking muffins with peaches. The fruit of my experiment was beyond my expectations. I'm definitely going to cook these again!

Ingredienti per 12 muffin:

 • 250 gr farina 00 setacciata.
 • 2 uova.
 • 50 gr di burro fuso.
 • un cucchiaio da minestra di lievito.
 • 3 pesche mature.
 • un cucchiaino raso di cannella (opzionale).
 • un pizzico di noce moscata (opzionale).
 • 3-4 gocce di estratto di vaniglia o mezza bustina di vanillina (opzionale).
 • zucchero grezzo per decorare (opzionale).
Preriscaldiamo il forno a 180°C.

Ingredients for 12 muffins:

 • 250 gr whole wheat flour.
 • 150 gr brown sugar (or white, you decide).
 • 200 gr plain or peach yogurt (you can use a different flavor if you like but remember that you'll taste it A LOT in the baked muffin).
 • 2 eggs.
 • 50 gr melted butter.
 • 1 Tsp baking powder.
 • 3 ripe peaches.
 • 1 tsp cinnamon (optional).
 • a pinch of nutmeg (optional).
 • 3-4 drops of vanilla extract or 1/4 tsp of vanillin (optional).
 • some raw sugar (optional).
Preheat the oven to 350°F (180°C).

Step 1) Peel 2 peaches and chop them in small pieces. Cut the third peach into 12 slices. Put apart.

Step 2) Mescoliamo farina, lievito, cannella, noce moscata e vanillina.

Step 2) In a large bowl sift together flour, baking soda, nutmeg, vanillin and cinnamon.

Step 3) Separatamente mescoliamo uova, yogurt, burro fuso, zucchero e l'estratto di vaniglia.

Step 3) In a different bowl cream together sugar, eggs, melted butter, yogurt and vanilla extract.

Step 4) Mix dry and wet ingredients. Add the chopped peaches.

Step 5) Spoon the mix into a greased muffin tin, place a slice of peach on each. Sprinkle with 1/2 tsp of raw sugar if you want a crunchy top. Bake at 350°F (180°C) for 15 minutes.

Trova l'intruso!

RICETTA: MUFFIN CIOCCOLATO E MELE (Chocolate apple muffins)

Follow my blog with Bloglovin

Ciao a tutti!

Sbaav.
The photos responsible for my drooling. Drool.
Vado a prendere dei fazzoletti :-D°°°
I'm gonna get some tissues :-D°°°

Hello everyone! This week’s muffins are delicious, irresistible chocolate and apple muffins. I stumbled on the photos above (from this blog) while browsing for inspiration and, OMG, just by looking at them, I started to drool on my monitor. So I decided to give it a try, making some slight adjustments to the ingredients (I have no idea what “canola oil” is and I don’t even know if/where I can find it in Italy, what is more I tend not to use oil in muffins so I opted for butter+yogurt) and to the quantities.
I usually try to minimize the amount of sugar I put in my recipes but these muffins were to meant for a friend not for the enlargement of my butt so I didn’t’ mind too much about the sugar (which is less than the original recipe anyways).
So let’s get on with the recipe for these soft, decadent chocolate apple muffins!

 • 2 uova.
 • 1 vasetto di yogurt bianco.
 • 80 gr burro.
 • qualche goccia di estratto di vaniglia.
 • 250gr di farina.
 • 40gr di cacao amaro.
 • 1 pizzico di sale.
 • 1 cucchiaio raso di lievito.
 • 1 cucchiaino di cannella in polvere.
 • 100 gr di cioccolato fondente spezzettato o gocce di cioccolato.
 • 2 mele.
Preriscaldiamo il forno a 180°C.

 • 40gr cocoa.
 • 1 tsp salt.
 • 1Tsp baking soda.
 • 1 tsp cinnamon.
 • 100 gr chopped dark chocolate.
 • 2 apples.
Preheat the oven to 350°F (180°C)

Step 1) Sbuccciamo le mele e tagliamole in piccoli cubetti. Mettiamo da parte.

Step 1) Peel and chop the apples in small pieces. Put apart.

Step 2) Mescoliamo insieme farina, cacao, lievito, sale e cannella in un'ampia ciotola.

Step 2) In a large bowl sift together flour, cocoa, salt, baking soda and cinnamon.

Step 3) Mescoliamo separatamente uova, zucchero, burro fuso, yogurt e vaniglia.

Step 3) In a different bowl cream together sugar, eggs, melted butter, yogurt and vanilla.

Aggiungiamo, infine, mele e cioccolato a pezzi.

Step 4) Mix everything together.

Step 5) Dividiamo negli stampi per muffin imburrati e inforniamo per 20-25 minuti a 180°C.

Ho finalmente comprato lo stampo da 12! Urrà!
I bought the 12 muffin baking tin at last! Yay!
Step 5) Spoon the mix into a greased muffin tin. Bake at 350°F (180°C) for 20-25 minutes.

I muffin sono pronti. Davvero irresistibili!

Our muffins are ready! Nobody will resist around these incredibly rich, moist and chocolatey treats. At least my friend couldn't (and neither could my boyfriend)! Keep them in a covered container and they will stay fresh for some days.

Buon appetito!

Until next time,

Alice

RICETTA: LA TORTA PARADISO PERFETTA (The Perfect Paradiso Cake)

Occhei. Buon lavoro e buon appetito!

Ok. Maybe this isn't THE perfect recipe but it is absolutely one of the best I've ever tasted. This Paradiso cake ( a traditional Italian sponge cake, also known as Margherita cake) has that perfect sponginess and that soft fine texture that will melt in your mouth. Yum. I got this recipe form my friend Claudia who I now worship and love. You can accompany this cake with cream, custard or a scoop of vanilla ice cream. Buon appetito!

Ingredienti:
 • 190g burro a temperatura ambiente.
 • 250g zucchero.
 • 4 uova.
 • 125g farina.
 • 125g fecola di patate.
 • 1/2 bustina lievito.
 • 1 bustina vanillina o qualche goccia di aroma di vaniglia.
 • 1 pizzico sale.
 • zucchero a velo.

Ingredients:
 • 190 gr of butter at room temperature.
 • 250 gr of sugar.
 • 4 eggs.
 • 125 gr of flour.
 • 125 gr of potato starch.
 • 1 spoon of baking powder.
 • 1/4 spoon of vanillin or a few drops of vanilla extract.
 • 1 pinch of salt.
 • icing sugar.
Preheat the oven to 180°C (356 Fahrenheit).
Cover a cake pan (24 cm) with parchment paper.

Step 1) Dividiamo i bianchi dai rossi.

Step 1) Divide the yolks from the whites.

You'll need to whisk until they're way more foamy.

Step 2) Whisk the yolks with 4 spoons of boiling water until they are light and foamy.

Step 3) Add sugar, vanillin (or the vanilla extract) and baking powder to the yolks Keep whisking until the mixture is smooth.

Step 4) Aggiungiamo il burro a temperatura ambiente a pezzetti. Sbattiamo finché non è ben incorporato.

Step 4) Add the butter at room temeperature and whisk until it is well mixed.

Step 5) Mescoliamo insieme farina e fecola e setacciamole delicatamente all'interno del composto.

Step 5) Mix the flour and the potato starch then gently sift it into the mixture.

Step 6) Whip the whites with a pinch of salt until they are stiff and thick.

It should look kinda like this,

Step 7) Gently fold the stiff egg whites into the mixture with a spatula until well combined.

Pour into the prepared cake pan and bake for about 45 to 50 minutes until golden. You can check if it is cooked by inserting a wooden skewer in the centre, if it comes out dry the cake is ready. If the cake top looks black you may have exaggerated with the baking ;-)

Guess who ate "the excess"?

If your cake ends up having a "dome shape" dont' worry: you can easily remove the excess with a sharp kinfe, then flip the cake over and cover with icing sugar.

The cake is finished and ready to be served. The best thing about this recipe is that this Paradiso cake stays fresh and moist for many days. Just keep it in the refrigerator. Enjoy it!

Alla prossima,
Until next time,

Alice <3

RICETTA: MUFFIN SEMPLICI ALLO YOGURT

Sono super facili, no?

Alice

Un ultima foto, così li vedete bene bene.
